4 c. sifted yellow cornmeal
2 c. self rising cake flour
1 tbsp. baking powder
1 1/4 tsp. salt
1/2 tsp. baking soda
2 to 2 1/2 c. milk
1 med onion finely minced
1 egg
1/4 c. minced fresh parsley or parsley flakes
Oil of some sort.
Sift cornmeal, flour, baking powder and soda, and salt into a large bowl. Make well in center. Add 2 cups milk, onion, egg, and parsley. Stir quickly until just combined; do not over mix. Add remaining 1/2 cup of milk if batter is too thick; it should be the consistency of porridge.
Heat oil in whatever you fry in to 365 degrees. Drop batter by rounded teaspoon into hot oil and fry, turning once, until richly browned, about 2 min per side. Drain on paper towels. Butter. Serve hot
