Tasty Tuesday - Piggy Bread

Who knows what Monkey bread is? Biscuits all baked together with sugar and butter. Very tasty.

Howabout Pigs in Blankets? Little sausages wrapped up in Biscuits. Also very tasty.

Now combine the two. What do you get? Piggy Bread!


Piggy Bread is a favorite in our house. This is how we make it:

2 cans biscuits
1/2 package little sausages.
7 eggs

Ooh! Look! An Egg!


First, preheat oven according to instructions on biscuit can. Second, chop the sausages into smaller pieces.  Third, wrap pieces up inside bits of biscuits. Place in pan, covering as much of the bottom as you can.
In a large bowl, scramble eggs, seasoning to taste (we usually add garlic and parsley) then pour over biscuits.
Place in oven and bake according instructions on can.
When finished, allow to cool, cut into pieces, serve and enjoy!

It's that simple!

Tasty Tuesday - Green Bean Spaghetti

This actually began as a joke between my sister and I. Whenever she comes across something impossible she says "Green Bean Spaghetti."

So to prove to her that the impossible is always possible, I made her some Green Bean Spaghetti!

Ingredients:
Green Beans (as much as you want)
Sauce from regular Spaghetti

Prepare Sauce the same way as for Regular Spaghetti. When the sauce is ready, add the green beans. Let them get warm.

Tasty Tuesday - Hush Puppies

4 c. sifted yellow cornmeal
2 c. self rising cake flour
1 tbsp. baking powder
1 1/4 tsp. salt
1/2 tsp. baking soda
2 to 2 1/2 c. milk
1 med onion finely minced
1 egg
1/4 c. minced fresh parsley or parsley flakes
Oil of some sort.

Sift cornmeal, flour, baking powder and soda, and salt into a large bowl. Make well in center. Add 2 cups milk, onion, egg, and parsley. Stir quickly until just combined; do not over mix. Add remaining 1/2 cup of milk if batter is too thick; it should be the consistency of porridge.

Heat oil in whatever you fry in to 365 degrees. Drop batter by rounded teaspoon into hot oil and fry, turning once, until richly browned, about 2 min per side. Drain on paper towels. Butter. Serve hot

Tasty Tuesday - Glop (Taco Filling)

This is a recipe I came up with one night when I didn't want to individually prep every singe taco I made. It tastes much better than it sounds!

Hamburger meat
Taco Seasoning
Refried beans
Avocado
Mayo
Hot sauce
Black olives
Tomatoes
Tortillas
Lettuce

Brown hamburger meat, seasoning with taco seasoning. When it is completely browned, add refried beans, Mayo, Hot Sauce, black olives, and chopped tomatoes. (of course, if you don't like an ingredient from that list, you can leave it out, and if you like something on your tacos that is not on the list, you can add that). Scoop some glop onto each tortilla, add some lettuce and enjoy!

Tasty Tuesday - Zucchini Banana Walnut Bread

First off, a hearty thank-you to the 98 people who downloaded my book the last two days! Not as many as previous times but ... if you add to it all the other free giveaways, and all the people who have purchased my book ... over 800 people have my book!!!

And now back to your regular programming

The other day, my mom wanted zucchini bread ... and my dad wanted banana walnut bread ... so I compromised and made ... BOTH!!

3 c. all-purpose flour
2 c. sugar
2 tsp ground cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
2 cups mashed ripe banana
1 c. canola oil
1 tsp. banana extract
1 tsp. vanilla extract
2 c. shredded zucchini
1 c. chopped walnuts

Preheat oven to 325. In a large bowl, combine the first six ingredients. In a separate bowl, beat the eggs, bananas, oil, and extracts. Stir into dry ingredient just until moistened. Fold in zucchini and walnuts.
Transfer to loaf pans sprayed with cooking spray, and bake for 40-45 minutes or until toothpick trick works.

Let cool for ten minutes before you cut into it and enjoy its melt-in-your-mouth goodness.

Tasty Tuesday - Pumpkin Cookies.

1 cup shortning
2 cups packed brown sugar
1 can (15 oz) solid-pack pumpkin
4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/8 teaspoon salt
(When I made these I had a larger can of pumpkin, so I also added some oats to thicken it up. Mom also said that they needed cloves)

In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in pumpkin. Combine flour, peaking powder, baking soda, cinnamon, and salt in a separate bowl. Gradually add the dry mixture to the pumpkin mixture and mix well. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 degrees for 13-15 min or until firm.

Tasty Tuesday - Spaghetti

1 lb. Package Spaghetti Noodles
1 lb. Hamburger Meat
16 oz Tomato Sauce
Oregano
Salt
Basil
Garlic Powder
Onion Flakes
Paprika

Fill a large saucepan half-full of water (helps if you add a pinch of salt and some vegetable oil). Brown Hamburger meat in a skillet. When you have a rolling boil, add the noodles and turn down the heat. When Hamburger meat is thoroughly browned, add Tomato sauce and spices to taste. When Noodles are at edible softness, strain and put back in the sauce pan. Add the Hamburger meat and Tomato sauce, serve, and enjoy!

Tasty Tuesday - Syrup

2 c. Sugar (doesn't matter which type, I usually use a cup of powdered and a cup of granuled, but any type of dry sugar works)
1 c. water
1 tsp. maple flavoring. (opt)

Put everything in a small sauce pan, and heat, stirring constantly. When desired consistency, remove from heat and let cool. Pour over pancakes, waffles or anything else you put syrup on, and Enjoy!

Tasty Tuesday - Pancakes.

I love pancakes. This is the recipe I use when I make them, although I usually triple or quadruple it.

1 egg
1 c. flour
1 c. keifer (Buttermilk works, too)
1 tbsp. sugar
2 tbsp. shortening, vegetable oil, or coconut oil
3 tsp. baking powder
1/2 teaspoon salt
Some sort of flavor (I usually use vanilla) to taste.

Beat egg until fluffy. Beat in remaining ingredients just until smooth. (oh, and if you're using a cast iron griddle, make sure it's already heating before you start beating up your ingredients. Oh, and make sure you add the keifer to the batter BEFORE the flour and the egg have completely been beat in ... if you don't - it's not pretty.)
Grease griddle. To test if hot enough, sprinkle a few drops of water on the griddle. If bubbles skitter around, heat is just right.

For each pancake, take the ladle that comes with silverware sets (you know, small ladle) and spoon it onto the griddle. Experiment to see how much batter you like to use. Cook pancakes until puffed and dry around edges. Turn and cook until golden brown.

Tasty Tuesday - Coconut Lemon Bars

I discovered this recipe last week and I love it:

1 cup flour
1/2 cup margarine or butter (about one stick) softened
1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
2 tablespoons lemon juice
1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup coconut flakes

Preheat oven to 350 degrees. Mix flour, margarine and powdered sugar. press in ungreased square pan (8x8x2 or 9x9x2 inches), building up a 1/2 inch edge. Bake 20 min. Beat remaining ingredients until light and fluffy, about 3 min. Pour over hot crust. Bake until no indention remains when touched lightly in the center, about 25 min.

Tasty Tuesday - Apple Cake

This is one of my favorite recipes.

You'll need:
1/2 c. sugar
1 c. vegetable oil
3 eggs
2 c. flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 tsp. vanilla
1/2 tsp salt
4 Granny Smith Apples
Chopped Nuts (opt)

Preheat oven to 350. Grease and Flour pan. Mix sugar, oil and eggs until blended, then beat it up for a minute. Add remaining ingredients excluding apples and nuts. Beat it up again. Chop up apples and stir them in. Stir in the nuts. Pour in the pan, stick it into the oven.

Bake until you can put a toothpick in and pull it out the way you put in (No goo!) 35-45 minutes.
